100% of our bottles come from the first wine press.. Second wine press are never kept, even in a low yield year. The use of sulfate, always a controversy, is now moderate, as we went too low after the years 2000 (no sulfate vinifications at the time).
When young, the Cabernet Franc is naturally high in tannin. That is why we age it in big wooden barrelsfor 10 to 30 months, according to the year. We then bottle it ourselves.
We have not changed our philosophy. For the last 30 years we have been producing sincere, pure and pleasurable wines. We work hard to preserve rigour in our practices. We stay classic but not simplistic: "There is no great wine without great grapes". We stay vigilant in our vineyards and with your grapes so we have less to interfere in the cellar.Read more
